So I totally missed Meal Planning Monday last week.
Not only that, I totally missed blogging for the past two weeks.
It’s my mojo. It’s gone.
I’m sure it will come back it’s just that after a very positive start to January, life is very much up in the air right now and it’s hard to focus on much. I really need to catch up on blogging though as I have a backlog and it’s stressing me out somewhat.
This week we’re all over the place so meal planning is a bit random and also cheap is the word of the week! We’re using cupboard stuff and freezer leftovers this week as much as possible and here is our plan,
Buffalo chicken chilli (from freezer)
Chicken kiev and salad
Soup and baguettes
Garbage frittata and salad
Sausage and mash (sausages still frozen from Christmas!)
Creamy chicken enchiladas
Not very exciting, but a meal plan it is!
