Happy New Year!
I’m back – sorry for such a long absence. I tried to keep up with everything but December was just mental with work, exams and school plus Christmas that I just needed a complete break from blogging. The downside was that I really missed it so I am glad to be back blogging now. Thanks for all the offers of help I received, I’m sorry I never got back to you at all. I’m going to have some busy points throughout 2016 so I might call on a few people to host if that’s okay? If you’re still interested in helping out, leave me a comment below and I’ll plan out the dates.
Hope everyone had a great Christmas and New Year? Mine was plagued with illness but I still enjoyed it and enjoyed the break from work. I’m back to the grind today though the children aren’t back until tomorrow. I have two family birthdays to contend with this week – Mr M and my daughter. Shopping after Christmas is so difficult so their presents are a bit rubbish. I’ll have to make it up to them with cake!
I’m also really looking forward to meal planning again, it all went a bit awry before Christmas and the festive period has mostly consisted of cheese and chocolate (and a healthy dose of red wine!). Here’s what I have planned for this week:
Monday: Pizza and salad
Tuesday: Taco Tuesday! (Mince beef most likely)
Wednesday: Salmon fillet, new potatoes and veg
Thursday: Spaghetti bolognese
Friday: Eating out for Little Miss M’s birthday!
Saturday: Lamb balti in the slow cooker
Sunday: Roast chicken and trimmings
I’ve gone easy this week as it’s a busy week going back to school and work and dealing with birthdays but I have an absolute TON of recipes on my “too try” list so I shall start being more adventurous (and hopefully healthier) next week.
