Meal Planning Monday (18th April 2016)

Good morning!

Well the results are in and I have managed to lose another 2lbs this week, which is good news especially as I had a few treats this weekend! Total loss of 8lbs in two weeks – 20 more to go! Yikes.

So this week for me there is no meal plan – I am going away, kids have playdates, everything is up in the air and I’ll mainly be eating lettuce anyhow but don’t let that stop you writing your meal plans and linking them up – everything you need is below!

Meal Planning Monday (11 April 2016)

Howdy partners! (Sorry, I’ve been listening to too much Nashville music)

Hope you had a lovely weekend. Mine was pretty chilled ie we did diddley squat but it’s back to work today so my chill is quickly disappearing. Good news after my weight whinge last week – I got on the scales this morning and I am 6lb down. So pleased with that as my goal was 7lb by 22nd April so I am well in. Only 22lbs to go…  I didn’t have any wine, I totally cut out snacking between meals, cake and chocolate etc and I reduced amount of bread I ate but I ate completely normal meals at night which I find helps me SO much more. I find dieting really depressing so knowing that I have a lovely normal dinner waiting for me in the evening keeps me going.  Just need to find the willpower to carry on now.

So my meal plan this week looks like this (it involves a lot of salad – eating more green where I’d normally shove in more carbs)

Jacket potato with prawns and salad
Pizza with a fried egg and salad
Lamb balti and rice 
Fish’n’chips (homemade)
Tacos
Pulled pork

I need to find something to do with my pulled pork other than baps as I want less carbs. I’m sure Pinterest will throw something up!

Meal Planning Monday (4th April 2016)

Sorry for the radio silence, doesn’t time just fly by? No time for blogging – I keep thinking “I’ll do that tomorrow” and then it just never gets done. Argh. This working 5 days a week malarky certainly takes it out of you. Anyhow, the reason I’ve not been here for Meal Planning Monday is that I’ve been on my holibobs – totally off-grid and I mean totally but I plan to blog more about that this week (she says!).

I have meal planned for this week – and then I decided to diet. Oh man. I stepped on the scales yesterday morning and the one stone I thought I had to lose turned into two. Ouch.  I’m setting myself half-stone goals so I want to lose 7lbs in 3 weeks which I actually think is doable as the first lot normally come off quickly before slowing down to 1-2lb a week.   As I had already meal planned my this week isn’t that diet friendly but I am generally going to eat normal dinners (though slightly smaller portions) and cut out the daily crappy food – stop snacking between and after meals, no crisps, cakes, chocolate and more soups and salads instead of being stodgy sandwiches and toast for breakfast and lunch. The other big change is NO WINE. I probably have about 1-2 bottles per week – how many calories is that? I dread to think so I am switching to a slimline g’n’t when I fancy a tipple. If that doesn’t work? I’ll have to go in hard but small steps to start with as I hate dieting, and really enjoy my evening meal and cooking so don’t want to give that up.

Here’s my meal plan….

Roast chicken dinner
Southern-fried chicken wraps and rice
Creamy garlic and mushroom spaghetti
Bacon and new potato salad
Thai salmon
Chilli and rice

I don’t think it’s overly bad considering I wasn’t planning on dieting when I made the plan.

Meal Planning Monday (14th March 2016)

Late to the party again but you know, it’s still Monday so WOO HOO!

Busy with work again at the moment but had the loveliest weekend, so relaxed, really nice family time and wasn’t the weather gorgeous?

I’m currently working my way through my cookbook collection with two goals – the first is to make a list of new recipes to try, the second is to add some more simple ideas to my camping cookbook. This is a notebook I started a couple of years ago where I write down all my dinner ideas. We got so sick of hot dogs and pasta that I’ve tried to be a bit more gourmet with our camping dinner plans and it’s really added something to the experience!

So this weeks meal plan….

Chinese style chicken curry
Lamb kofta meatballs in curry sauce
Spiced steak fajitas with pineapple salsa
Baked leek and goats cheese risotto
Pizza with fried egg and salad
Toad in the hole

Yums!

Meal Planning Monday (29th February 2016)

Morning!

I have been literally the World’s Worst Blogger recently. Despite having a ton of things to blog and all good intentions – my mojo has just upped and disappeared in February. We’ve been pretty busy decorating all the upstairs bedrooms which has meant some SERIOUS decluttering has had to take place, and that, coupled with work has meant by the time evening – and my blogging spot – comes around, there’s not much oomph left in me.

Other than to catch up with Nashville – has anyone seen this? I am late to the party with this but I am binge-watching and totally hooked. It definitely indulges my love of trashy country music.

What else has been going on? OH YES. Do you remember those soul-sucking exams I took in late 2015? Well I only went and freaking passed them and despite feeling like I sucked on my assignments (I did just scrape through) I managed to do better in my exams and managed to pass the entire diploma with a Credit. Go me!

Oh, and I got a kitten. Slightly less work than a toddler but trying all the same.

I’m really hope to regain my mojo,  I have still been cooking and meal planning and want to do more but energy levels are low. I really need to lose weight and get more active, I don’t think this is helping my sloth-like existence right now.

Here’s my meal plan!

Jacket potatoes with chicken kiev and salad
Chilli con carne with rice and tortilla chips
Spaghetti bolognese
Salmon en croute with baby potatoes and peas
Pizzas and salad
Sausage, mash and Yorkshire puds

There you go. Not the most exciting or inspiration of meal plans but it’s a meal plan all the same!
